Griddlecakes

Page 99 of the Boston Cooking School Cookbook. I still have this cookbook. Completely falling apart now, stuffed with random recipe notes. It was my mom’s, and a common fixture in the kitchen of my childhood. And yes, the pancakes, or more accurately, griddlecakes, appeared on page 99. The book would naturally fall open to this page.

My spouse and then my kids have each had the same reaction when I have made these for them: “WHY have you not been making these for me all along?”

Here is a snippet from my story about these griddlecakes:

“You may think you know pancakes, but unless you have tasted Griddlecakes from The Boston Cooking School Cookbook, page 99, you do not know what I am talking about. Thin and dense, not fluffy. Pale in color. Lightly buttered and dripping with Vermont Maid brand, maple-flavored syrup.

Cooked by my mom. Spatula in hand. Cast iron frying pan on the electric stove.”
